Shun Ken Onion Designed KAI Shun Classic Chef's Knife 8" (20.3 cm) Blade5ParkerMarch 18, 2008I cook professionally and use this knife everywhere. It's like my right hand, I really love this knife. The attention to detail and superior quality puts it far above any German style cutlery. I'm going to be replacing my set one by one with Shun and Ken Onion Shun knives. Those who love quality, food, and fine tools should consider the Shun product line.
Shun Ken Onion Designed KAI Shun Classic Chef's Knife 8" (20.3 cm) Blade5KevinFebruary 28, 2008This knife is sharp beyond belief. In fact it is some what scary and does take some time to get used to. The handle fits perfectly in different grip positions and due to the curved blade operates more like a Mezzaluna than a chef's knife. With practice you come to love this knife. One added feature to this Ken Onion knife is that it is very attractive setting on the counter.
Shun Ken Onion Designed KAI Shun Classic Chef's Knife 8" (20.3 cm) Blade5Sandy B.February 28, 2008I begged for this (Ken Onion Chef's) knife and am so happy my prayers were answered. I can dice ripe cherry tomatoes and debone meat all with the ease of cutting butter. Plus, as a woman with small hands, I can attest that this knife fits more comfortably than the Henckels set I'm now taking to Goodwill. I also got the Shun santoku, which I use when chopping veggies and prefer the D-shaped handle somewhat, but truth be told, if you could only afford one good knife, this is the one you should get. It does everything and does it superbly. It holds its sharpness (which the Henckels did not at all and sharpening is expensive) - so well that you really want to wash, dry, and put it away immediately because if left in the sink you can easily bump it with a hand/finger/etc. and cut yourself. But the knife is so good that it makes food prep, normally a tiring and long process, much faster and considerably more enjoyable.
Shun Ken Onion Designed KAI Shun Classic Chef's Knife 8" (20.3 cm) Blade5JCFebruary 28, 2008This knife looks magnificent and works as well as it looks. My primary reason for owning this knife was personal. It is about craftsmanship. For those who enjoy the process of cooking, having a knife of this caliber enhances the craftsmanship in such a way that the price of this knife, although steep, is something worth overcoming. Laid on a carrot, it cleanly slices through with a single pull and the force of gravity. Now that's a thing of beauty.
